Banana Walnut Chia Pudding

Ingredients
  • 1 medium banana ripe
  • 2 tbsp shredded coconut I use unsweetened, but it's up to you!
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup vanilla rice milk Or substitute with milk of choice
  • 1/4 cup chia seeds
Toppings
  • 1/4 cup banana chopped
  • 2 tbsp walnuts chopped
  • sprinkle shredded coconut

Instructions
  1. Add all ingredients, except chia seeds, in a blender and process until smooth. Pulse in chia seeds.
  2. Place mixture into a covered glass bowl and let sit overnight or for at least 4 hours.
  3. Serve layered with sliced banana, walnuts, and a sprinkle of coconut.
