Instructions
Prep
Chop cilantro and garlic.
Juice lime.
Make
Add cashews, cilantro, olive oil, garlic, soy sauce, maple syrup, lime juice, water, and crushed red pepper (optional) to your food processor
Pulse until mixture forms a smooth paste.
Place 1/2 of the paste in a glass bowl and add chicken pieces. Toss to evenly coat. Marinate at least 2 hours or overnight for best results.
Preheat oven to 375°F. Line baking sheet with parchment paper and arrange chicken pieces skin side up.
Toss cauliflower with balance of paste. Arrange around cauliflower on baking sheet.
Roast for about 30-40 minutes in the center of your oven. Check chicken temperature – internal should reach 165°F.
Serve with extra wedges of lime.
