Sheet Pan Cashew Garlic Chicken

  • 2/3cup cashews
  • 1/2cup cilantro leaveschopped
  • 4tbsp olive oil
  • 4clove garlicroughly chopped
  • 2tbsp soy saucelow-sodium version can be used
  • 2tsp maple syrup
  • 1 lime juiced
  • 1 limewedged (optional)
  • 2tbsp water
  • 1/2tsp red pepperoptional
  • salt & pepperto taste
  • 1.5lb chicken thighbone in
  • 1head cauliflowercut into florets
  1. Chop cilantro and garlic.
  2. Juice lime.
  1. Add cashews, cilantro, olive oil, garlic, soy sauce, maple syrup, lime juice, water, and crushed red pepper (optional) to your food processor
  2. Pulse until mixture forms a smooth paste.
  3. Place 1/2 of the paste in a glass bowl and add chicken pieces. Toss to evenly coat. Marinate at least 2 hours or overnight for best results.
  4. Preheat oven to 375°F. Line baking sheet with parchment paper and arrange chicken pieces skin side up.
  5. Toss cauliflower with balance of paste. Arrange around cauliflower on baking sheet.
  6. Roast for about 30-40 minutes in the center of your oven. Check chicken temperature – internal should reach 165°F.
  7. Serve with extra wedges of lime.
